Seeded potato noodles with apple and crumble

Ingredients
Seeded potato noodles600 g starchy potatoes
200 g flour
50 g butter
1 egg
1 pinch of salt
150 g melted butter
80 g poppy seeds
icing sugar
Crumble
50 g butter
50 g sugar
125 g flour
1 g cinnamon
Apple
200 g tart apples
30 g sugar
25 g lemon juice
15 g butter
Half a vanilla pod
How to make it
Seeded potato noodles
Cook the potatoes until soft, press through a potato ricer and allow to cool slightly. Mix the warm potato with the flour, butter and egg, then cover the mixture and leave to stand for 15 minutes. Sprinkle some flour onto your work surface and shape the dough into rolls the width of your thumb. Then, slice the rolls into sections 2 cm long and shape into elongated noodles.
Add the noodles into boiling, lightly salted water and simmer until they rise to the surface. Rinse with cold water and leave to dry. Before dishing up the noodles, heat the butter in a pan, add the poppy seeds and icing sugar, and sautée the noodles in the mixture.
Crumble
Beat the butter and sugar until fluffy. Add and mix in the flour and cinnamon. Rub the crumbs between your hands and spread over a baking tray covered with baking paper. Bake at 170° C for about 9 minutes until golden.
Apple
Dice the apples into roughly 5 mm cubes. Caramelise the sugar until it turns light brown. Add the lemon juice, butter, diced apple and scraped vanilla pods, and steam until soft.
Serving
Arrange the seeded potato noodles on a long plate. Position the diced apple among them and sprinkle the crumbles on top. Garnish with apple blossom or herbs according to personal preference, and depending on the season.
