Spring onion and potato quiche with asparagus

Recipe for 4 persons

Ingredients:
1 cake dough
30 g butter
250 g spring onions
500 g boiled potatoes
8 green asparagus spears
3 eggs
80 g heavy cream
50 g sour cream
50 g milk
salt, pepper, nutmeg
4 asparagus spears

Instructions

- Grease the baking dish
- Roll out the cake dough onto the greased baking dish; make holes with a fork
- Cut the spring onions into strips and sauté them in butter
- Spread the sautéed spring onions onto the cake dough
- Boil the potatoes until soft
- Peel the boiled potatoes and cut them into thin slices
- Layer the potato slices on the baking dish
- Mix the eggs, heavy cream, sour cream and milk. Season to taste
- Pour the mixture onto the baking dish as well
- Bake the quiche in the oven at 180°C until golden brown
- Peel the asparagus and blanch them in salted water
- Rinse them shortly in cold water
- Cut the asparagus into pieces

Tip:
Use potatoes that were boiled one day before

Serving

Place the quiche on a wooden board
Spread the asparagus on top
Garnish with garden herbs. Enjoy!
